Lemon Cucumbers


DSC00783Something new I discovered with my latest CSA share! I thought it was another kind of squash, but upon closer inspection and a detailed lineup of the packing list, I figured out these bad boys are “lemon cucumbers.”
DSC00786They look like lemons (ish) but taste like cukes! They are a bit on the seedful side, but a cool switch from the regular cukes.

DSC00792We decided to use these in some spring rolls! Took out most of the seeds, then chopped up the cuke, and also had some mango and avocado to add in. Delish!

The peanut sauce we used is the following:

  • 2 T peanut butter
  • 4 T tamari
  • juice of 1 lime
  • 1.5 T rice vinegar
  • 1.5 t sugar (agave)
  • 1 T garlic chili sauce
  • 1 T water

If you see them at your store or local farmers’ market, you can now wow your friends with your knowledge of what these bad boys are.

  1. Dammit, now i’m hungry. Should not have looked at this post just before bed. I’m making your spring rolls tomorrow. That peanut sauce look delicious. Going to make that too. Is that sauce your own concoction?
    I have regular cukes. I have a snowball’s chance in h-e-doublehockeysticks of finding a ‘lemon cuke’ in NEPA lol. Maybe Barb can find some at WF in Joisey.

    • hehe 🙂 Yeah, I made up the peanut sauce ’cause I couldn’t find one that I liked just right. But feel free to modify to your tastes! I don’t think I even saw lemon cukes here at the regular store, either, so yeah, I doubt good ‘ol Wegman’s would carry them. Too exotic. 😉 If MomC does find some, they’re worth trying! But I wouldn’t go out of your way. They are mostly seeds, and not much flavor diff. Hope your rolls turn out great!! Send me a pic and an analysis.
