I’ve still got a LOT of dill (and chives) from the CSA… And they keep giving me more each week… So I’ve got to come up with more ideas! This time, a nice, light summery bean salad with a dill dressing. Mega easy!
- 4-5 T fresh dill, chopped
- 1 T fresh chives, chopped
- 2 stalks celery, chopped
- 1 small cucumber, seeded and diced
- 3 cans of beans (garbanzo, pinto, black, red, whatever you want!), rinsed and drained
- juice of 3-4 lemons
- 1 T olive oil
- salt, pepper
Put all these ingredients in a large bowl and stir together! Taste and adjust seasoning. It’ll taste better if it gets to sit in the dressing for at least an hour.
You could also add some tomatoes and/or bell pepper. Maybe serve it over a bed of rice or lettuce…
